Elegant wines made with finesse


Château de Birazel is presenting its cuvées Romane, Paulus, Auguste and Maximus at Wine Paris & Vinexpo Paris 2023.

Since launching in 2017, the domaine has expanded to 17 hectares of vines, with grape varieties including Merlot, Carménère and Cabernet Sauvignon. A new state-of-the-art wine facility was completed in 2020, with the first wines, Romane (white) and Paulus (red), being born a year later. Located in Saint-Hilaire-de-la-Noaille, in Gironde, South-West of France, the region’s rich terroir produces elegant wines characterised by their finesse and freshness. Following the advice of prominent wine expert, Jean-Philippe Fort (Cabinet Rolland), the quality of each cuvée is optimised through the careful selection of each plot, cutting-edge technology and high-grade materials. Cuvée Romane, a blend of Semillon (70%), Sauvignon blanc (15%) and Sauvignon gris (15%) grapes, harvested at guaranteed maturity, is fermented at low temperature, and aged in new barrels (40%) and diamond shaped concrete tanks (60%). Cuvée Paulus is a blend of Merlot (73%), Cabernet Sauvignon (20%) and Carménère (7%) grapes. These are run off into amphoras (33%), diamond-shaped concrete tanks (60%), and oak tuns (7%) for optimal malolactic fermentation, followed by nine month ageing. Cuvée Auguste, a blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Carménère is made from the domaine’s best parcels and aged in new barrels for 15 months. Last but not least, Maximus, is Château de Birazel micro-cuvée, made from rigorously selected millèsime Carménère and Cabernet Sauvignon grapes. Going forward, the estate has adopted an ecological approach, protecting hedgerows and effectively reducing its consumption of plant protection products. It has also already begun the process to obtain its organic certification by 2025–2026.
